Who doesn't love pizza? Have you ever tried the breakfast version? Actually, there are many varieties of breakfast pizza out there but here's just one version....
1 refrigerated pizza crust
8 eggs, slightly beaten
Chopped green peppers
Small jar sliced mushrooms
1 pkg. chopped ham
8 oz. shredded cheese (or more!)
Press crust into pan. Spread chopped ham, mushrooms and cheese over the crust. Pour eggs over the top. Season with salt and pepper.
Bake according to direction on pizza crust package - until crust is brown and pizza is "set" in the center. Serve with fruit and you have a great breakfast!
For those who don't like peppers and mushrooms, I left them off of one side. You can really make this pizza any way you want - substitute sausage or bacon instead of ham. It would also be good with onions and/or red pepper added. The good thing about it is that you can have these ingredients "on hand" and make whenever! A great late Saturday morning breakfast or a quick and easy breakfast before work or school - enjoy!
