Football Friday Fare - Chocolate Variety

Every tailgate menu needs a little piece of chocolate, right? Today, I have included 3 chocolate options to include in your football weekend menu. The first one is my favorite!


 
Blitz Brownies
 
1 box of brownie mix, mixed according to package directions
1 pkg. fudge stick cookies (Keebler)
1 jar of marshmallow creme
1 C. peanut butter
 
Preheat oven to 350 degrees. Spray bottom of a 13 X 9 pan with cooking spray. Spread half of brownie mixture in the pan. Sprinkle evenly with CRUSHED fudge stick cookies. Place marshmallow creme and peanut butter in microwave for 30 seconds. Quickly, stir together until well blended and spread over cookies. Spread remaining brownie mix over the top. Bake for 35-40 minutes or until knife inserted in center comes out clean. Allow to cool. Cut in squares.
 
 
Hawaiian Chocolate Chip Cookies
 
1/2 C. granulated sugar
1/2 C. brown sugar
1/2 C. butter, softened
1 egg
1 t. vanilla
1 1/2 C. all-purpose flour
1/2 C. flaked coconut
1/2 t. baking soda
1/4 t. salt
1 C. semisweet chocolate chips
3/4 C. coarsely chopped macadamia nuts
 
Preheat oven to 350 degrees. Combine sugars,butter, egg and vanilla. Beat until light and fluffy. Add flour, coconut, baking soda and salt. Beat until a soft dough forms. Stir in chips and nuts.
 
Drop by heaping teaspoons 2 inches apart onto cookie sheet (I spray mine very lightly). Bake for about 10 minutes or until edges are lightly browned. Cool completely.
 
 
Chocolate Caramel Balls
 
1 8 oz. package of cream cheese, softened and divided
1/2 C. brown sugar
1/2 C. butter
1/4 C. granulated sugar
1 egg
1 t. vanilla
2 C. all-purpose flour
1/4 C. unsweetened cocoa
1 t. baking powder
18 caramels, cut in half
 
Frosting
 
1 1/2 C. powdered sugar
2 T. unsweetened cocoa
2 T. caramel ice cream topping
 2-3 t. milk
 
Heat oven to 350 degrees. Combine 6 oz. of the cream cheese, brown sugar, butter, granulated sugar, egg and vanilla. Beat until light and fluffy! Add flour, cocoa and baking powder. Beat until soft dough forms. Shape 1 T. dough around 1 caramel to form a ball (completely cover caramel!). Repeat with remaining dough and caramels. Place balls 2 inches apart onto lightly greased cookie sheets. Bake for 10 - 14 minutes, or until set. Cool completely.
 
Mix frosting ingredients together until smooth. Spread frosting evenly onto cookies. Let dry completely before storing.
