What's in the Cookie Jar? No Baking Required

 
Boiled Cookies with Nutella
 
When I was first learning to cook, I made these cookies (without, the Nutella, of course!). It was one of the more memorable cooking learning experiences for me. If you cook them too long, they will be crumbly. If you don't cook them long enough, they will not "dry" (the term I used back then for the cookies becoming firm). When I think of these cookies, I can't help but think of Patti Lawson Wilhite (who LOVED these cookies) and fun times growing up on Bowden Street!
 
2 C. sugar
1/4 C. cocoa
1/2 C. milk
1/2 C. margarine
1 t. vanilla
pinch of salt
1/4 C. peanut butter
1/4 C. Nutella *
3 C. quick cooking oats
 
Over medium heat, cook sugar, milk and margarine. Boil one minute. (Use timer!) Remove from heat. Stir in vanilla, salt, peanut butter, Nutella and oats. Stir until combined. Drop by teaspoonful onto wax paper and cool until they "dry".
 
You can use 1/2 C. of peanut butter and leave out the Nutella if you'd like! That's how I have always made them but they are good with the Nutella, too!
 
* Nutella is a Hazelnut Spread with Skim Milk and Cocoa.

Nutella® spread, in its earliest form, was created in the 1940s by Mr. Pietro Ferrero, a pastry maker and founder of the Ferrero company. At the time, there was very little chocolate because cocoa was in short supply due to World War II rationing. So Mr. Ferrero used hazelnuts, which are plentiful in the Piedmont region of Italy (northwest), to extend the chocolate supply.
