Super Snacks


Chocolate Gooey Butter Cookies



Dill Pickle Dip

Super Bowl Party time! Need a snack to take to YOUR Super Bowl Party? Sweet or Savory? Or Both? You decide!!
 
Chocolate Gooey Butter Cookies

1 t. vanilla extract
Confectioner’s sugar, for dusting
1 (18 ounce) box moist chocolate cake mix
1 (8-ounce) block cream cheese, room temperature
1 egg
1 stick of butter, room temperature
 
Preheat oven to 350 degrees F. In a large bowl with an electric mixer, cream the cream cheese and butter until smooth. Beat in the egg. Then beat in the vanilla extract. Beat in the cake mix. Cover and refrigerate for 2 hours to firm up so that you can roll the batter into balls. Roll the chilled batter into tablespoon sized balls and then roll them in confectioner’s sugar. Place on an ungreased cookie sheet, 2 inches apart. Bake 12 minutes. The cookies will remain soft and gooey. Cool completely and sprinkle with more confectioners’ sugar, if desired.
 
Dill Pickle Dip
The Cutting Edge of Ordinary 
 
1 block cream cheese, room temperature
1- 1 1/2 cups chopped dill pickles
1/4 C. finely chopped sweet onion
2-4 T. pickle juice (less for thicker dip or more for thinner dip)
1 t. dried dill weed
1/2 t. kosher salt
Black pepper to taste
 
Stir all ingredients into the cream cheese until evenly distributed. Transfer to serving dish and cover with plastic wrap. Refrigerate, at least, an hour before serving. Serve with Snack Factory Pretzel Crisps - any variety!
 
Whether you are cheering for Baltimore Ravens or the San Fransisco 49ers, enjoy the last football "game day" for a while. I'll be cheering for the Ravens who have former Alabama players Terrence Cody and Courtney Upshaw and The Blind Side's Michael Oher - that's how I pick my Super Bowl Team!
