Luck of the Lime

 
I don't do alot for St. Patrick's Day but I do usually try to include a touch of green somewhere in the day. So, I thought this key lime pie might be just the touch. I have made different versions of key lime pie but I this one is new. I think I'll have to remember this one.
 
Key Lime Pie
 
Crust
 
1 1/2 cups vanilla wafer crumbs
1 1/2 cups bread crumbs
1 stick butter (melted)
 
Filling
 
8 ounces cream cheese, softened
1 can sweetened condensed milk
1/3 cup key lime juice
1 cup sour cream
 
To make the crust, combine all crumbs with melted butter and press into a 9 inch pie plate. Bake the crust in a 350 degree oven for 20 minutes or until browned. Set aside to cool while you make the filling. Allow to cool completely.
 
To make the filling, beat cream cheese until smooth. Add sweetened condensed milk and key lime juice. Blend well. Stir in the sour cream until completely smooth. Pour into cooled crust and chill for, at least, a couple of hours before serving. Garnish with lime slices.
 
I was searching for a pie to make using a vanilla wafer crust when I found this one. I thought the vanilla wafer/bread crumb combination was interesting and it turned out really well! Enjoy on St. Patrick's Day, Easter or any other occasion!
