What's for Dessert? Strawberry Bundt Cake



Strawberry Bundt Cake

1 box strawberry cake mix
1/2 C. strawberry pie filling
3/4 C. frozen strawberries (reserve 6 T. juice)
4 eggs
1/3 C. water

Grease a Bundt pan with butter and sprinkle with granulated sugar. Mix all ingredients, except juice from strawberries, and pour batter into pan. Bake at 350 degrees for 50 - 60 minutes. When done, remove and cool only slightly. Cake should still be warm when glazed.

Strawberry Glaze:

2 C. powdered sugar
1/2 stick softened butter
6 T. strawberry juice

Mix above ingredients in saucepan and boil for 2-3 minutes. Remove from heat and drizzle over warm cake.

Note: I made this cake on my daughter's actual birthday since we had already celebrated with "birthday cake" several days before. She LOVED it! She has always been a fan of strawberries and she really enjoyed the addition of the flowers for decoration! It made a festive centerpiece for her birthday dinner as well!......I was inspired to make this cake by a friend who made one similar for a Bridal Tea we hosted a couple of weeks ago. The menu consisted of a variety of pound cakes on pedestals served with fruit and nuts - a very simple menu and perfect for a Sunday afternoon tea! The hostess displayed the cakes at different elevations on a table filled with satin, tulle and fresh flowers - it was a beautiful display! Will file that idea for the future!
